Eye Healthy Spring Recipes

As you might imagine, your overall eye health has a lot to do with how you take care of your body as a whole. Someone who lives an active, healthy lifestyle has a better chance of maintaining healthy eyesight than someone who is sedentary, smokes, and eats poorly. And eating well is one of the best things you can do for your body and your eyes.

Foods that are rich in antioxidants, Vitamin E, beta-carotene, Vitamin C, and zinc can help you keep your eyes healthy and your vision strong. Here are few recipes to help you get a good share of those supplements in your diet this spring.

Caprese Salad

Tomatoes are full of the carotenoids we just mentioned, especially lycopene. They can also be used in a wide range of dishes from pasta sauces to sandwiches, but we’d recommend making a simple and delicious caprese salad. Just a few ingredients, hardly any prep time, and it’s good for your eyes. Not to mention it goes perfectly with the spring weather.

Kale Chips

We know what you’re thinking—kale is overdone. But seriously, there’s a reason for that. Kale, and other dark, leafy greens like spinach, are full of antioxidants that can help you maintain your vision health in the long-run. Plus, these kale chips are quick and easy to make, and you don’t really feel like you’re eating a salad.

Spinach and Mushroom Omelet

Yep, it turns out that eggs are also pretty good for your eyes. Like those leafy greens, they contain lutein and zeaxanthin, nutrients that are good for eye health. Add in mushrooms and some of that spinach we were just talking about and you’ve got an eye healthy breakfast to start your day off right.

Grilled Salmon

If you haven’t heard about the benefits of omega-3 fatty acids, then you’ve been missing out big time. Omega-3s have been shown to have a host of health benefits when added to your diet, including being great for eye health, and salmon happens to be packed with them. This grilled salmon dish is great way to get outside and grill this spring, but with an eye healthy substitute for the usual burgers and hot dogs.

Maple Dill Carrots

And yes, as you’ve likely heard before, carrots are indeed good for your eye health. They won’t improve poor eyesight, but they certainly won’t hurt it. They’re a good source of beta-carotene and also pretty delicious when prepared correctly. Try out this maple and dill carrot recipe one night this spring, and we promise you’ll be adding it to your regular list of recipes.
